Chewy Chocolate Chunk Bars
2 cups firmly packed brown sugar
1 1/2 cups Land O Lakes® Butter, softened
2 Land O Lakes® Eggs
2 teaspoons vanilla
1/4 teaspoon almond extract
3 cups uncooked old-fashioned oats or quick-cooking oats
2 cups all-purpose flour
1/2 teaspoon baking soda
8 (1-ounce) squares semi-sweet or bittersweet baking chocolate, chopped
1/2 cup chopped pecans or walnuts
1 (1-ounce) square semi-sweet or bittersweet baking chocolate
1 (1-ounce) square white baking chocolate
1 teaspoon shortening
Heat oven to 350°F. Combine brown sugar and butter in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add eggs, vanilla and almond extract; continue beating until well mixed. Reduce speed to low; add oats, flour and baking soda. Beat until well mixed. Stir in 8 ounces chopped chocolate and pecans.
Spread batter into ungreased 15x10x1-inch jelly-roll pan. Bake for 24 to 27 minutes or until set. Cool completely.
Place 1 ounce square semi-sweet chocolate and 1/2 teaspoon shortening in small microwaveable bowl. Microwave on MEDIUM (50% power), stirring occasionally, until melted (1 to 1 1/2 minutes). Drizzle over cooled bars. Repeat with white chocolate and remaining shortening. Cool completely until chocolate is set. Cut into bars.
